Quince

Have you ever heard of quince? This relative of the apple and pear is notorious for only being edible when cooked. I've recently seen this mysterious fruit dotting the holiday bakery scene around Seattle. Quince tarts, quince pies...all of which look remarkably apple-like and appetizing.

Anyone ever cooked with quince before? I'm up for a challenge. Consider me intrigued...

As a recent london transplant, this was a totally new thing to me too until this year and i'm SUCH a convert. It turns a gorgeous red color when cooked and makes the whole house smell delicious.
