How Do You Like Your Eggs?

How do you like your eggs? I'm growing bored with my tiresome order of eggs scrambled with black pepper and grated cheese. Occasionally, I mix it up and consider myself a benedict girl, but truly, that's only on special occasions at worth restaurants. Scrambled eggs is my usual M.O.

Yet, I don't want to bail on eggs altogether, often they suffice as my #1 source of protein when I'm feeling it's a veggie-meal kind of week. So...any creative ways to spice up morning eggs? I'm not going to lie, I'm definitely loving the flower shaped variety!

Happy Friday

Happy Friday my lovelies, I'm off "mom" duty from last week and ready to thoroughly enjoy my weekend. Not too many official plans set in stone, aside from an exercise class + brunch with girlfriends, but I'm sort of happy for the lack of plans and the beauty of flexibility.

Most important - 1 week + 1 day until Mexico (giddy dance to follow!!!) Can't wait!

Brunching

Brunch is my favorite meal of the day. Not quite breakfast, not quite lunch - but BRUNCH! The in-between meal that is filling, fabulous, and typically follows a morning of sleeping in.

I'm going to attempt this recipe tomorrow, Sour Cream Peach Waffles, for an extra special brunch treat!

Tic, Tac, Toast

Ever get bored over breakfast? Invest in this bad boy. Tic tac toe over toast. Priceless! What I'm wondering is, what would you use as X and O markers...Peanut butter & jelly? Jam & butter? What's your edible marker of choice?

Breakfast in Bed

Hotcake Hot Spot

Inspired by Seattle Metropolitan magazine's latest issue, "Hot Breakfast Spots," my Mom and I popped into Geraldine's Counter, to taste out this recommendation ourselves. This Columbia City neighborhood favorite features diner style decor, and breakfast and lunch cuisine without the grease you'd expect from comfort food. Breakfasts are garnished with thick slices of homemade sourdough toast, and a warm, friendly disposition from the wait staff. I can personally vouch for the avocado and pepperjack omelet, which was delicious!

Also a fun fact newcomers may not know: patrons who pay with cash receive "Geraldine dollars." This Monopoly-esque money is awarded $1 for every $ spent in tax on your meal. These dollars can be saved and cashed in for future dining endeavors at Geraldine's Counter.
