Snacking Last Night: Ricotta Zucchini Fritters

I had some leftover zucchini from a summer vegetable pasta I made a few days ago, and decided to try something new, ricotta zucchini fritters. Who knew zucchini was so easy to grate? They turned out quite well, although I would've loved a great dipping sauce or aioli. Any ideas of what would pair best with zucchini fritters?

Sriracha aioli! Seriously I'll dip just about anything into sriracha aioli, but those fritters sound like they'd go with it so well!!!
Step one, take desired amount of mayonnaise and put it in a dish.
Step two, add desired amount of sriracha and mix well.

Yum - these look delicious! Definitly will have to try these soon. I think a simple dip of low fat mayo and lemo juice would go really well with this. OR you could do a roasted red pepper dip/hummus- I bet that'd be really good together!
Those look really good, and it looks like they have enough cheese that my husband might be tempted too!

YUM!!! these sound so delicious! i would do a curry aioli of some sort...i just ate an hour or so ago, but i could go for some of these :)
mmm mmm, these look too good not to try. I echo everyone's suggestions but also try some sort of herb cheese spread or maybe some goat cheese, red onions and plop it all on a whole wheat bun? Thanks for this recipe - I think it's dinner tonight:)

I love just about anything in fritter form - yum!
I second the sriracha aioli idea. I had zucchini fritters a few weeks ago and we mixed sour cream with sriracha. Delicious!
If I were you, I'd treat them like potato latkas and eat them with applesauce and sour cream...of course if you want to go even healthier, trade plain yogurt for the sour cream. You won't even notice the difference. Delish!
