Tuscan Kale

I'm expecting a bunch of Tuscan Kale in my CSA box delivery this week. My cousin Jenny cooks with this leafy vegetable all the time because 1 cup = 100% of your daily A and K vitamins.

So here's my dilemma... I've only used kale a handful of times before, and need to expand beyond the 2 guaranteed "tasty" kale recipes I know (Two-Bean Soup with Kale and Roasted Chicken Legs with Potatoes and Kale).

How do you weave kale or tuscan kale into your cooking? Do tell :)

we put some raw kale in our green morning ruit smoothies, or i always throw some in a vegetable soup. i'll have to try your recipes!

I love kale, I could seriously eat it everyday. Chop it up with some shallot, feta cheese, salt, pepper olive oil and squeeze some lemon over it and its a great salad!

I throw it into soups with Italian sausage. The two taste work really well together.

I, as well, LOVE kale! Its my favorite thing to grow, so easy to harvest and incorporate in most meals.

I like to cook it as little as possbile, so I rely on this recipe quite often:

But I also make a sauteed version with onions and a bit of balsamic vinegar to top a sweet potato stuffed with ricotta...
