Dinner Last Night: Corn Chowder with Bacon


Do you ever crave soup?
I'm a soup hound, I love soup. Chunky, creamy, thick, or thin, it doesn't even have to be the coldest day of the year, you can count on me to always have an appetite for soup. Yesterday was a soup kind of day.

I just received my latest Cooking Light magazine in the mail and was flipping through it while casually watching Friday Night Lights when this recipe caught my eye and caused my stomach to rumble with gustatory excitement - corn chowder with bacon and shrimp. Since I've never been a fan of shrimp, I mentally scratched out that ingredient and began to peruse my cupboard in search of the necessary ingredients.

The soup was fairly easy and quick to make, and we devoured it. Literally, zero leftover for lunch tomorrow. Too bad so sad. I guess that's the sign of a good meal though, right?

Love corn chowder! I think my favorite recipe came from Cooking Light too. Yes to bacon, no to shrimp. :-)

Oh yes, soup is just the best... comfort food, indeed! And, YES, yesterday was definitely a soup kind of day :) p.s. to reply to your comment...the pretzel at brave horse is Amazing :) & with the peanut butter/bacon dip...YUM!

hmm. I bypassed this recipe initially, but may have to test it out!

I like soup, I do, but I only usually crave it in the cooler months. My husband however could eat it every day even if it's 100 degrees out!
