Catch a Leprechaun

I am in love with this leprechaun trap cake! Spotting a leprechaun on St. Patrick's day is the ultimate goal for most of my students, let alone catching one! This cake would be quite a hit on St. Patrick's Day! Note to self for next year...

Happy St. Patrick's Day

Are you wearing green? You better be wearing green!! Looking forward to St. Patrick's Day at school, everyone will be pinching each other, filling out assignments on green paper, and keeping an eye out for lucky leprechauns that might dart through our classroom. Cheers!

Just Fondue It

Another way to put that Irish stout to good use! Rich and hearty and undoubtedly Irish, this Irish cheddar and stout fondue would be an ideal appetizer for St. Patrick's Day dinner.

Irish Cheddar and Stout Fondue

Prep: 30 minutes; Total: 45 minutes
Servings: Makes 6 first-course servings.

Ingredients

2 cups 1- to 1 1/2-inch-diameter red-skinned potatoes halved
2 cups cauliflower florets

2 cups very small brussels sprouts
2 apples, cored, cut into wedges
1 pound Irish cheddar cheese grated
2 1/2 tablespoons all purpose flour
3/4 cup (or more) Irish stout (such as Guinness)
6 tablespoons frozen apple juice concentrate thawed
1 tablespoon Dijon mustard

Preparation

Steam all vegetables until tender, about 15 minutes. Arrange vegetables and apples around edge of large platter.Meanwhile, toss cheese with flour in large bowl. Bring 3/4 cup stout, juice concentrate, and mustard to simmer in large saucepan over medium heat. Gradually add cheese mixture, stirring constantly, until cheese is melted and smooth, thinning with more stout, if desired. Season to taste with salt and pepper. Transfer fondue to bowl. Place in center of platter with vegetables.

Market tip: Sharp white cheddar is a great substitute for the Irish cheddar.

Countdown to Green!

Time to go green! No, no, not that kind of green, put your hybrids and biodiesel away...it's the original green - St. Patrick's Day! My students have already established a countdown, t-minus 7 days left before you HAVE to wear green to school!

In elementary school we take this holiday very seriously, and try and plan activities that incorporate shamrocks, St. Patrick's Day, leprachauns...basically all things green! Stay tuned this week for future St. Patrick's Day inspired posts!

And to kick off our countdown to green, hat's off to Martha Stewart's oh-so-delicious three leaf clover cupcakes. Appealing both to the eyes and the stomach, Mmm...
