Dinner Last Night: Green Curry & Lime Chicken

I recently checked out Diane Sanfilipo's Practical Paleo cookbook for the library, and my mind is blown!  This is one of the most comprehensive Paleo resources I've ever seen.  It is beyond a cookbook, it gives a thorough explanation of of how eating a Paleo diet benefits numerous lifestyles and medical conditions.  It gives suggestions on lifestyle changes, and a meal-by-meal plan for beginning your journey to clean eating.  I perused the book cover to cover and I barely scratched the surface.

Anyway...I'm all about Diane's methodology, and since I've jumped on her bandwagon, I decided to start bookmarking recipes, among which included Thai Green Curry and Lime Chicken.  The marinade is savory, tart, and packs a citrus punch.  We left it in the broiler a bit longer to crisp up the skin for extra crunch.  Eaten with our favorite coconut rice and tamari-roasted broccoli, I think it's official we've added a new favorite to the dinner rotation.

Cookbook Crush: Ready or Not! Nom Nom Paleo

The Ready or Not! Nom Nom Paleo cookbook has been in heavy rotation in our house lately as we've cut down on dairy and gluten consumption as a family.  The best part of this cookbook is it makes delicious healthy and flavorful paleo recipes quick and accessible.  I'm happy to report back the recipes we've tried thus far have been kid-approved while being delicious for the adults as well!  The format is also very user friendly, with step by step photographs of the food alongside the written instructions. Also appreciated are suggestions for how to modify or adapt a pressure cooker recipe to suit a slow cooker, that kind of thing.

Last week, I posted our success making bo la lot (betel leaf beef rolls).  We've also tried the Pressure Cooker Bo Ssam (a salty sweet caramelized Korean beef).  The recipe was inspired by David Chang's Momofuku version (I used the adapted instructions for a slow cooker since we don't have a pressure cooker) - it was divine!  I was sorely disappointed I didn't make enough for leftovers.  We've also made hobo stew, souvlaki, and XO pork with blistered green beans.  In addition to having about fifty more recipes bookmarked. 

If you've considered making some dietary changes but still like your familiar favorites - this cookbook is a great gateway into the land of Paleo/Whole 30.

Dinner Last Night: {Paleo} Sausage Stuffed Acorn Squash

Another Paleo success - two dinners in a row, I feel like I'm on a roll!  (We'll see how long this lasts...) This was the perfect dinner for a cold, crisp, November night.  I love the flavor and heartiness of acorn squash, and while my husband is still acquiring a taste for squash, I think I may have sold him with this dish.  Sausage stuffed acorn squash - we picked up a red pepper ground sausage at the market which paired nicely with the onion, celery, apple, and rosemary.  All in all, a successful, filling, PALEO dish!


Paleo or Bust

Woohoo, we are back on the making dinner bandwagon!  With our little one almost 3 months, it's high time we start using our kitchen more frequently for its intended purposes!  What kick-started this return to cooking was my husband and my decision to try eating Paleo.  Perhaps you've heard this buzz word mentioned before - Paleo for all intents and purposes is eating whole foods that our hunter-gatherer ancestors would've thrived on, i.e. meat and vegetables - no grains, no dairy, no processed anything.  

Sounds intense, right?  Well, my husband has been excited about this since he learned about this way of eating through CrossFit, and I've decided to try it as well, after educating myself about wheat and its negative effects on the digestive system via the book Wheat Belly.  Many people recommend jumping into the Paleo lifestyle headfirst, literally throwing out anything processed from your cupboards.  While we've made some changes, not restocking once necessary items, we've decided to take a slower, steadier approach.  However, we've unanimously agreed to refrain from omitting beer, wine, and chocolate.  Because you just gotta indulge a little, right?

Anyway - our first official made at home Paleo dinner was last night - an amazing roasted pork tenderloin, stuffed with a mushroom, bacon, spinach, garlicky concoction....Mmmamazing!  Not only was it flavorful, but the pork was moist and cooked perfectly, always a plus in my book!  We're currently whipping up Paleo stuffed acorn squashes tonight, I'll report back tomorrow...
