Weekend Baking: Baked Oatmeal

Ever since omitting eggs from my diet, I've felt better, but have been struggling with breakfast.  Since we tend to run about 10 minutes behind schedule, I'm often stashing a protein bar in my bag or eating a cold toaster waffle while running out the door.  

However, on the occasional weekend, when I have all my ducks in a row, the stars align, and somehow I'm prepared and on top of my game, I make this baked oatmeal.  This recipe has been shared amongst my girlfriends, and made in the kitchens of many a girls trip.  Each prepares this oatmeal a tiny bit differently, each adding their own twist or variation, and yet all are delicious.  I personally add coconut chips, coconut milk, sliced almonds, omit the egg, and go heavy on the bananas and frozen berries.  It's relatively quick to throw together, bakes and reheats wonderfully.  It's the perfect breakfast to make ahead and eat throughout the week.

Weeknight Baking: Chocolate Zucchini Bread (Gluten Free, Dairy Free, Vegan)

While our summer garden is fading fast, we recently picked the few remaining zucchini off the vine, and with no other plans for the produce, we opted to make zucchini bread!  My daughter made chocolate zucchini bread at a cooking camp this summer, and has been eager to replicate the recipe in our own kitchen ever since. Thus, my little sous chef and I decided to make this delicious chocolate zucchini bread together.  While it wasn't quite her recipe, she did enjoy grating the zucchini, sifting the cocoa powder, and stirring the various ingredients into the batter.

The recipe listed is vegan, but I substituted 3 eggs for the flax eggs listed, and it turned out just fine; moist, flavorful, and oh-so-chocolatey.  You really can't tell there's any zucchini in this bread, and it was sure was delicious!

Weekend Baking: Strawberry Peach Galette

Oh how I do love summer fruit, with stone fruit topping the charts as one of my favorite summer indulgences!  After bringing home a bundle of fresh peaches to accompany our Costco strawberry run, I decided to liven up an ordinary Friday with a fetching dessert - a peach strawberry galette.  

I typically keep frozen pie dough on hand, and once defrosted and rolled out, the only thing left to do was toss the fruit with a dash of sugar and vanilla and voila - galette ready to go!  My husband and I devoured it hungrily as we watched House of Cards.  Excited to make another!

Weekend Baking: Gingersnaps

It seems my sweet tooth has returned, taking a brief hiatus during my pregnancy, only to return with a vengeance post-partum.  These gingersnaps a la Smitten Kitchen made for the perfect cookie aroma filling the house on a misty, drizzly, rainy fall Sunday.  Amazing - as all her recipes are.  Enough said.




The Pie Project - #1 Apple Cranberry Crumble Pie

And I'm off to a good start - made my first pie!  Apple Cranberry Crumble Pie a la Joy the Baker.  I followed her directions to a T, and the pie turned out flavorful and delicious.  This was my practice pie - we had a group of friends over Sunday afternoon to watch the Seahawks game, so I used the opportunity to test the recipe on my girlfriends before making it for my family at Thanksgiving.   

A few changes I'll make before baking again; cut the apple slices a tad thinner, as there were a few slices that were a little too crunchy for my taste, and add more cornstarch, as the base of my pie was a little soupy.  But otherwise - another win for Joy the Baker.

Cookbook Crush: Homemade Decadence

So I bit the bullet and bought Joy the Baker's new cookbook, Homemade Decadence on Amazon pre-order.  Yes, I couldn't even wait until it's actual release.  OMG you guys, this cookbook is awesome.  I love reading a cookbook like an actual book, cover to cover, reading the food "chapters," in sequence in addition to the little blurbs and notations that give you insight into the baker/chef's vision.  

This cookbook is seriously mouth-water inducing.  Some favorites from my first reading: for brunch: whole wheat, peach, and fresh sage scones, sour cream coffee cake with brown butter glaze, and roasted-potato breakfast nachos (hello, yum!)…Sweets: chocolate-malted oatmeal cookies with salted peanuts; dark chocolate, pistachio, and smoked sea salt cookies….Pies and Cakes: apple pie with cheddar-bacon crust, and of course, the cookbook cover's chocolate-peanut butter pretzel layer cake.  YUM!

 I might have to cook and bake my way through this Julie & Julia style. For real.

Weekend Baking: Coconut Oil Pumpkin Bread

Hello fall!  The season of pumpkin everything is upon us - hooray!  I generally stock up on canned pumpkin puree this time of year, so when the inclination to whip up a pumpkin inspired dish hits, I'm ready!  I came across this recipe for coconut oil pumpkin bread while perusing my blogs and it caught my eye, as coconut oil is maj these days.  It.  Is. Awesome.  Hands down the best pumpkin bread I've ever made, and possibly the best I've ever tasted.  Moist, flavorful, baked perfectly.  Boom.

Weekend Baking: Blueberry Cornmeal Butter Cake

Last Saturday afternoon, when faced with the difficult decision of cleaning the house vs. baking, I opted for the messier alternative - flour up my kitchen and bake!  Inspired by Carly's success with this recipe, I opted to try blueberry cornmeal butter cake, another Smitten Kitchen cookbook recipe.  Despite it being mid-afternoon, and already satiated from lunch, I figured, I'd almost always rather bake than clean house, so why not? 

The final product I would say was a success.  I would agree with Carly's assessment that it's more of a coffee cake, though technically, I have never made a butter cake to speak of, so I have no real basis of comparison.  My husband mentioned that it reminded him of a crumbly (but tasty) blueberry muffin.  Ultimately, if I were to bake again, I would lessen the amount of flour and cornmeal in the streusel topping.  My topping didn't brown as I'd hoped, leaving a sugary/floury layer atop the completed cake.  While still delicious, it didn't the cake the sugary, photogenic oomph displayed in Deb's cookbook photos.  Mental note for next time.  Happy baking!


Blueberry Cornmeal Butter Cake, from The Smitten Kitchen Cookbook
For the Cake:
8 tablespoons (1 stick) unsalted butter, at room temperature, plus extra for the pan
1 cup all-purpose flour, plus extra for the pan
1/2 cup cornmeal
2 teaspoons baking powder
1/2 teaspoon salt
1 cup granulated sugar
2 large eggs
1/4 teaspoon vanilla extract
1/4 teaspoon lemon zest, freshly grated
1/3 cup sour cream
2 cups fresh blueberries, rinsed and patted dry
For the Streusel:
1/2 cup granulated sugar
6 tablespoons all-purpose flour
2 tablespoons cornmeal
1/4 teaspoon ground cinnamon
Pinch of salt
2 tablespoons unsalted butter, cut into small pieces
Preheat oven to 350 degrees. Line the bottom of a 8×8 square pan with parchment paper. Butter and flour the pan or coat with cooking spray.
Whisk the flour, cornmeal, baking powder, and salt in medium bowl and set aside. With an electric mixer, beat the butter and sugar in a large bowl until pale and fluffy, for at least 2 minutes. Beat in the eggs one at a time, scraping down the bowl in between additions, then add the vanilla and zest. Add a third of the flour mixture, all of the sour cream, and another third of the flour, beating until just blended after each addition. Scrape down sides of bowl. Mix the remaining third of the flour mixture with the blueberries. Fold the blueberry-flour mixture gently into the cake batter.
Spread the cake batter in the prepared cake pan. Use your original dry-ingredients bowl to combine the dry topping ingredients with a fork. Mash in the butter with a fork, your fingertips, or a pastry blender. Scatter the topping over the batter.
Bake the cake until the top is golden brown and a tester inserted into center comes out clean, about 35 minutes (mine took 45 and the middle was still a bit undercooked). Cool the cake in the pan on a rack for 5 minutes. Run the spatula around the edges of the cake to loosen it, then flip out onto the cooling rack.
Yield: 16 2-inch squares

Weekend Baking: Strawberry Rhubarb Crisp

Call it nesting, call it extreme productivity, or something in between...but lately I've been getting these culinary aspirations to whip up multi-course meals, namely entrees through dessert.  This is not a daily, or even weekly occurrence by any means, but my burst of energy this Sunday night resulted in this scrumptious meal: black bean and butternut squash tacos (in honor of Cinco de Mayo) followed by Ina Garten's strawberry rhubarb crisp.  I always seem to miss rhubarb's short season, so this year, I was determined to bake at least something with this tart, delicious fruit.  
All in all - a decent little meal, thank you very much!  Now I'm laid up on the couch in a food coma, but given the ample kicking post-dinner, I'm pretty sure baby enjoyed the dinner as well. :)

Another Joy the Baker recipe success - brown butter banana strawberry bread.  Easy, quick, and the final product emerged from the oven moist, flavorful, and delicious.  Excited for my breakfast tomorrow!

A "Joy the Baker" Week

This week I made not 1, not 2, but 3 different recipes from the Joy the Baker cookbook!  Being my spring break, I had a little extra time on my hands to dabble in the kitchen.  Of course, I neglected to photograph my baking endeavors, but recapping via blog seemed like the next best option.

Recipe #1 - Chocolate Brownie Cookies with White Chocolate and Roasted Macadamia Nuts
These cookies were rich, decadent, and delicious.  Fresh out of the oven they appear slightly underdone, but I trusted Joy's notes and resisted the urge to bake for a few additional minutes.  Proved to be the right choice, as they were the perfect consistency when cooled.  In making again, I think I would add more white chocolate chunks and slightly less macadamia nuts.

Recipe #2 - "Man Bait" Apple Crisp
I brought this dessert to a double date dinner at a friend's house.  It was delicious!!  I really enjoyed Joy's suggestion of mixing Granny Smith and Fuji apples, the Fuji flavors added a touch of sweetness that I appreciated.

Recipe #3 - Single Lady Pancakes
I decided on this recipe Saturday morning upon the discovery that our pantry box of Bisquick pancake mix had a mere tablespoon or two remaining.  Feeling the craving for pancakes, I turned to Joy's recipe, and doubled it to accommodate my husband and my hungry appetite.  "Married lady pancakes," perhaps?  I made some slight changes to this recipe, substituting 1% milk for buttermilk (since I didn't have any on hand), and I added 2 mashed bananas and 3/4 cup chopped pecans.  Who knew homemade pancakes were so easy?!  I'll never buy Bisquick again!

All in all - 100% success with all 3 recipes, can't wait to test out some more!  Thanks JOY!

Weekend Baking: Apple Pie Cookies


This weekend in honor of my alma mater's annual rivalry game I made apple pie cookies via smitten kitchen. When it comes to cookies, I'm usually a unanimous fan of cookies containing some form of chocolate, so I wasn't quite sure if I was going to like these. While they were a bit time consuming, the final product was worthwhile. They're like teeny tiny apple pies, filled cinnamon-sugary, apply goodness (plus a pinch of nutmeg and cloves - which I recommend).

Weekend Baking


This weekend I channeled my inner Julia Child and baked up a storm. The dreary weather provided the perfect opportunity to muss up my kitchen, since it was blustery, rainy, and gray outside. Thus, it definitely merited an afternoon toiling around indoors. Plus, with the *husband* away on business, I had ample time to myself.

Here's what I whipped up -

Needless to say it was a weekend of happy eating. Both recipes were easy to follow and divine to devour. I baked so much this weekend, I actually ran out of flour! How often does that happen?? Well...hmm...don't answer that, just know, that was a first for me!

Weekend Baking: Blueberry Lemon Tea Cakes


Since I've discovered my artful talent of concocting decent recipes from what little ingredients I have on hand, I decided to try this magic yet again, this time in the form of a dessert.

The last page of Martha Stewart's latest Living called out to me, Blueberry Lemon tea cakes. Since I recently received a lovely little Le Creuset baker in springy "fennel" green from my friend Anna as a bridal shower gift, I decided this was the perfect opportunity to put it into action.

This recipe is definitely a winner, just the right amount of tart + sweet, with a pitch perfect sugary lemony glaze on top. Plus, it's adaptable, I was a little short on frozen blueberries, so I threw in some frozen raspberries for good measure, which I can oh-so-humbly say, only enhanced the flavor.

Weekend Baking: Chocolate Chip Coconut Banana Bread

My fiance and I went for a run around 8:30 last night, and by the time we got home, 9:15 ish, when we'd normally be going through the motions to get ready for Monday morning, an adrenaline rush from the run gave me a delayed burst of energy.

So there I am, wired, at 9:45 PM, and needless to say, going to bed at my normal time is not a reasonable option. So what did I do? I decided to bake. Yep. Weird, I know. Why not I guess? I shuffled through my to-bake folder on my web browser and landed on chocolate chip coconut banana bread. Of course 60 minutes of cook time left me full by the time it finished baking, but I'm excited to dive into it for breakfast!

Weeknight Baking: Strawberry Cinnamon-Sugar Muffins

Remember when I bought the 3-lb box of strawberries? Yeah, I've devouring those berries like it's my J.O.B., but today it became pretty clear I couldn't eat the entire box alone. So I came up with a new game plan before they go bad. Solution: strawberry cinnamon-sugar muffins! They turned out delicious, definitely a recipe to repeat!

Weekend Baking: Banana Oatmeal Chocolate Chip Cookies

Lately, I've been in a baking mood on Sunday afternoons. It's that welcome lull between go-go-go an getting back into gear for the Monday workday. This week was no different. This time, I made banana-oatmeal-chocolate chip cookies via this recipe. I was expecting a more pronounced banana flavor, but not so much.

My recipe revisions for next time: use 1 cup of oatmeal instead of 2, use 1 cup of chocolate chips rather than 1/2, and mash 2 bananas for that extra punch of chocolaty-banana flavor. However, now I have to eat the entire first batch so I can move onto the new and improved recipe!

Weekend Baking: Blueberry Yogurt Cake

This recipe for blueberry yogurt cake caught my eye on a fellow blog and I couldn't stop thinking about it. So rather than do the sensible thing like wait until the weekend to try it out, I decided to make it at 8:30 at night, just to fulfill my curiosity.

Thankfully it was worthwhile, as it turned out delicious! Plus, don't you just love the way blueberries bake, they're like little surprise bursts of flavor!

Weekend Baking: Banana Crunch Muffins

This weekend I was craving bananas so I whipped up a batch of Ina Garten's Banana Crunch Muffins. Tres delicious. I added coconut-almond granola and shaved coconut to the tops which added a satisfying crunch. Thanks again Ina! I wonder, does she even have a bad recipe?

Weekend Baking: Oatmeal White Chocolate Craisin Cookies

My mom made a batch of these cookies for me yesterday evening, and by 7:00 tonight (roughly 24 hours later), I've eaten all but all of them. Oatmeal white chocolate craisin cookies might just be my new favorite cookie! Sweet but with a kick of tartness from the craisins. Wouldn't be surprised if I polished off the entire batch tonight, so much for eating healthy!
