I'm always looking for a way to eat a healthy meal full of veggies without the same ol' heaping plateful of veggies every time. And then,
voila I found this,
summer vegetable curry soup. This soup was delicious! Full of veggies, vitamins, and with a pleasant kick of spice. And to make matters even better, aside from dicing and chopping, it was easy to make!
To make this dinner stretch into lunch for the next day, I made some jasmine rice and poured the remaining portion over it, creating a simple next-day curry.
