Dinner Last Night: Spicy Peanut Portobello Kale Rice Bowl

I just finished watching Forks Over Knives, an eye opening, informative food documentary, which encouraged me to revisit the contents of my fridge.  In an effort to eat a more plant-based diet, I promptly made this for dinner, spicy peanut portobello kale rice bowl.  It required a handful of bowls to prep, but turned out pretty good!  Yay for another successful (and delicious) kale recipe!
