Tuscan Kale
I'm expecting a bunch of Tuscan Kale in my CSA box delivery this week. My cousin Jenny cooks with this leafy vegetable all the time because 1 cup = 100% of your daily A and K vitamins.
I love kale, I could seriously eat it everyday. Chop it up with some shallot, feta cheese, salt, pepper olive oil and squeeze some lemon over it and its a great salad!

I have a crockpot veggie minestrone soup that uses kale. It's pretty yummy. Let me know if you'd like it!
ReplyDeleteI, as well, LOVE kale! Its my favorite thing to grow, so easy to harvest and incorporate in most meals.
