My first experience making quinoa, and I'm happy to report it was simple and tasted good. Very similar to rice but a little fluffier and less dense. I made this recipe - Asparagus & Baby Artichoke Quinoa Salad from one of my fave cooking blogs - Closet Cooking.
But that's the one and only quinoa recipe I have in my backpocket. Anyone have any other quinoa recipes up their sleeve?

ReplyDeleteI love quinoa!! I use it a lot as a sub for orzo or rice. And sometimes I'll throw it in a spinach salad too for a little protein.
ReplyDeleteLooks great! I eat lunch at this place called Protein Bar quite frequently and they use quinoa in a lot of things, as filler like rice. So you could get it in a wrap or a burrito, as a base with chili on top, black beans, etc. Anything you use rice for can be subbed with quinoa! It's yummy and so good for us!
ReplyDeleteThe quinoa meal I eat almost weekly goes as follows: prepare quinoa, boiling it in half water, half coconut milk. Dump it in a bowl. Add garbanzo beans, chopped tomatoes, chopped cucumber, avocado in small pieces, chopped hard boiled egg, cumin sead, mustard seed, sesame oil, salt, pepper and some Braggs; toss, eat!

ReplyDeleteI got this red quinoa salad recipe from the back of the box.
2 teaspoons grated lime zest
3 tablespoons fresh lime juice
1 tablespoon olive oil
1 cup Red Quinoa
2 cups Vegetable Broth
1 can Black Beans, rinsed and drained
1/2 cup salsa
1 cup grape tomatoes, halved
4 scallions, thinly sliced
1/4 cup chopped fresh cilantro
Salt to taste
1. Rinse quinoa under water & drain. Bring broth to a boil and add quinoa. Reduce heat to simmer & cover. Let cook for 15-20 minutes. Let quinoa stand for 5 minutes covered.
2. Place quinoa in a bowl and fluff with a fork. Add zest, juice, oil, beans, salsa, tomatoes, scallions and cilantro. Mix well. Season to taste. Serve warm.
I added some avocado to my salad. Also, I didn't have any vegetable broth so I just cooked my quinoa in water and the recipe still tasted delicious.
